Using this pohilosophy, Garbriel has built his daylesford winery to hand craft his single vineyard wines from grapes sourced from around the Western Central Highlands of Victoria, and to run his wine bar victoria and music venue that follows the same rule, to use only the best local musicians to create that special evening ensuring Horvat's wine bar is on everyone's 'what to do in Daylesford' list.

Horvats is one of the great wine bars of Victoria and combines the creativity of winemakers and great musicians alike, to produce the ultimate artison experience. Every Friday night at Horvat's wine bar, which is the only live piano bar in Daylesford, you can listen to jazz, contemporary, through to classical being played on our restored 100 year old New York piano. You are never short of things to do in Daylesford on a weekend!

Then every Saturday night, a broad range of local, yet world class performers take stage to bring you live music in our intimate 1870's raw brick venue. Music ranges from swing jazz, acid jazz, Mississippi blues, and improvised funk to soulful tunes.
